How to Cook:

1. Heat olive oil in a pot, season chicken with salt, black pepper, and cook in oil for 6 minutes or until brown.

2. Stir in carrots, garlic, and cook for 2 minutes. Add remaining ingredients except for basil, mix well and cover the pot.

3. Bring to a boil, and simmer for 15 to 20 minutes or until vegetables are tender; adjust taste with salt.

4. Dish food, garnish with basil and serve warm.
